BAKED STEELHEAD TROUT WITH MUSHROOMS, TOMATOES & GINGER
Coated in a medley of mushrooms, tomatoes and ginger.

- Preheat oven to 400°F. Line a baking sheet with foil, coat with non-stick spray.
- Heat oil in medium skillet over medium-high heat. Add scallions, mushrooms, tomatoes, ginger and garlic and cook 6-8 minutes until vegetables are tender. Add soy sauce, sesame oil and chives, continue cooking to combine 2-3 minutes.
- Arrange steelhead skin side down on prepared baking sheet. Spoon mushroom mixture over fillets and bake, uncovered, 15-20 minutes or until fish is opaque and cooked through.
