BROILED STEELHEAD TROUT SALMON WITH MUSTARD-TARRAGON SAUCE
Fresh tarragon pairs beautifully with salmon, and just a little goes a long way in this simple recipe.

TOTAL TIME: 20 min
- Preheat broiler to high heat. Position rack 4-5 inches away from heat source. Line a rimmed baking sheet with foil, brush with oil.
- Mix together paprika, brown sugar, salt and pepper in a small bowl. Sprinkle seasoning over fish. Place fish on prepared pan and broil just enough to sear fish, about 5 minutes.
- Carefully lower pan to middle of oven and reduce heat to 325* Bake for 10 minutes or until fish is cooked through.
- For the sauce; combine mayonnaise, mustard, tarragon, salt, pepper and lemon juice in small bowl. Add more lemon juice for desired consistency. Spoon sauce over cooked fish.
